Crystal unveils dining concepts for 2028 cruise ship launch

Crystal Cruises has released first-look renderings of specialty dining venues on board Crystal Grace, its new ship scheduled to launch on 11 June 2028.

Previews have been shared of Umi Uma, Osteria d’Ovidio and Beefbar, alongside expanded outdoor dining areas integrated into the restaurant designs.

The move comes as cruise operators continue to invest in food and beverage as a key differentiator, with increased focus on chef-led concepts.

The venues have been designed by Tillberg Design of Sweden in collaboration with Crystal’s culinary partners, with layouts centred around indoor-outdoor dining and shared social spaces.

Gunter Lorenz, Vice President of Food and Beverage Operations for Crystal, said: “We’ve refreshed each restaurant with thoughtful design updates and the flexibility to introduce new menu elements over time.”

Umi Uma, created with chef Nobu Matsuhisa, will return as the ship’s Japanese-Peruvian concept. The restaurant will seat 84 guests on deck five and feature a sushi bar alongside a main dining room, framed by a full-height glass wall overlooking the ocean, while the menu will offer Nobu’s signature dishes such as black cod and Chilean sea bass, alongside sushi and fusion creations.
